Each term we really enjoy working with our Food and Nutrition department running a competition for the Year 8 Food and Nutrition students.
The task is to design a dish for the Greens Lunch Time Counters. We start by giving a talk to the students, talking about the complexities of menu planning for such a large number of students in our setting, seasonality of food, mass production and the serving environment among other factors.
This term our Winner Joelle H (Year 8) demonstrated that she had really thought about creating a dish that would be adaptable to many different tastes, that it was on trend with the Street Food culture that is extremely popular and also thought about the ingredients to make them cost effective and seasonal. Joelle's dish of Fiesta Fajita Bowls features on our current menu on a Tuesday week two.
The main components are plated (or bowled) ready for students to grab and then a topping station with hot sauces, jalapenos, sour cream, guacamole and crispy onions so students can make the bowl to their taste.
