With the hot weather in full swing, many of us are reaching for ice cream to keep cool. This simple, quick and fun recipe is a healthier option, made with just a few ingredients and naturally sweetened with fruit. Enjoy it on its own or set up a sundae-style topping station for an extra treat. All you need is a blender, and you can easily experiment with different flavours.
Serves: 4
Ingredients
- 3 ripe bananas, sliced and frozen
- 2-3 tablespoons Greek yoghurt (optional, for extra creaminess)
- A splash of milk (dairy or plant-based), if needed
Optional Toppings
- Fresh strawberries or raspberries
- Blueberries
- Mango chunks
- A sprinkle of granola
- Desiccated coconut
- Dark chocolate chips
- A drizzle of honey
Method
- Slice the bananas and freeze them for at least 4 hours, or overnight.
- Place the frozen banana slices into a food processor or blender.
- Blend until smooth and creamy, adding the yoghurt and a splash of milk if needed.
- Spoon into bowls and let everyone add their favourite healthy toppings.
- Enjoy straight away as a soft-serve ice cream or freeze for another hour for a firmer texture.
