With hopeful summery weather on the horizon this weekend, a favourite salad perfect for this time of year and for BBQs is a Watermelon, Feta and Mint Salad. This is always popular when we have it on our salad bar. This simple recipe combines sweet, salty and fresh flavours, making it a perfect dish for summer entertaining or a healthy holiday snack.

Ingredients (Serves 4)

  •  ½ large watermelon, cut into bite-sized cubes
  •  200g feta cheese, crumbled
  • A handful of fresh mint leaves, roughly chopped
  • 1 small cucumber, diced
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Freshly ground black pepper

Method

  1. Place the watermelon and cucumber into a large bowl.
  2. Add the crumbled feta and chopped mint.
  3. In a small bowl, mix together the lime juice and olive oil.
  4. Drizzle the dressing over the salad and gently toss.
  5. Finish with a twist of black pepper and serve chilled.

Why not try?

For extra crunch, add some toasted pumpkin seeds or sliced red onion.
