At CultureFest, the Greens Team served homemade lemonade and scones with clotted cream and jam. They were a real treat, and the lemonade in particular was a big hit in the lovely warm weather. We’ve included the recipes below so you can try making them at home.

Homemade Lemonade
Makes just over 1 litre

Ingredients:
3 unwaxed lemons
140g caster sugar
1 litre cold water
Handful of mint sprigs
Extra mint and lemon slices for decoration

Method:

  • Squeeze the juice from the lemons into a saucepan, making sure to get as much as possible. Add the squeezed lemon halves to the pan as well.
  •  Add the sugar and water to the pan, then bring to a low simmer over medium heat, stirring until the sugar dissolves.
  • Add the mint to the pan, as much or as little as you like. It enhances the lemon flavour and adds freshness.
  • Once the liquid has cooled, strain it through a sieve to remove the peel, pips and mint.
  • Chill in the fridge and serve over ice with a slice of lemon and a sprig of mint.
